Tamarind Salmon with Roasted Veggies

The holidays are definitely a crazy time. Over the past two weeks, I have hd five fantastic food gatherings. One of those food gatherings involved some of my cousins from my mom’s side. Every year, around Christmas, the older cousins gather together, dress in over-sized sweatpants and sweatshirts, and eat as much as food as we can (it’s sometimes disturbing how much food we end up eating). For this particular fat feast, I made tamarind salmon with veggies and chicken confit, while my brother made stovetop mac and cheese. Deliciously fantastic!!

Tamarind Salmon with Roasted Veggies

2 large salmon filets (got mine from Costco)

2 tsp tamarind mixed with 2 tbs water

1 tsp garlic powder

1 1/2 tsp salt

1 tsp ground black pepper

2 tsp ground cumin

1 tbsp lemon

1 tbs olive oil

2 tsp dried mint

2 bell peppers, chopped

2 small onions, chopped

2 tomatoes, chopped

For Veggies

1 tbs olive oil

2 tsp dried mint

2 tsp lemon juice

1 tsp salt

1 tsp ground black pepper (or fresh cracked)

Directions

Preheat the oven to 400 degrees.

Place the salmon filet in a large baking tray. Drizzle with olive oil, lemon, and tamarind. Sprinkle with salt, pepper, garlic, and dried mint.

In a large bowl, toss the chopped veggies with salt, pepper, dried mint, and lemon.

Place the veggies in the tray around the salmon. Bake the salmon for about 40 minutes. You can also tell if the salmon is cooked by white foam that forms on top. Enjoy the salmon by itself or alongside bulgur, or rice.
