Blue corn chip nachos

Earlier this week, I was taking note of the ingredients that I had in the fridge and pantry. I noticed blue corn tortilla chips, spicy jalapeno sausage, jalapenos, colored peppers, black beans, tomatoes, and avocado. Hmmm…the possibilities. Well, as I also perused many foodie sites, I couldn’t help but notice the number of nacho recipes. And I thought about it, who doesn’t like tortilla chips smothered in melted cheese and colorful veggies? No one, I think, meaning that everyone loves it. Although I didn’t watch the Superbowl, I still made these nachos and enjoyed a favorite game day snack.  My roommates and I polished these off in no time!


1/2 bag blue corn tortilla chips

1 bag shredded pepperjack cheese

1/2 red bell pepper, diced

1/2 green pepper, diced

2 spicy chicken jalapeno sausages, diced

1 jalapeno, thinly sliced

1 avocado, sliced

1 can black beans, drained and rinsed

Quick Salsa 

2 tomatoes, chopped

1 jalapeno, diced

salt to taste

1 lime, squeezed (or 1 tsp lime powder)


*Two layers of chips and toppings! *Preheat oven to 350 F

  • In a pan, heat the chopped sausage to cook away some of the fat.
  • Cover a baking pan with a layer of chips and sprinkle with cheese. Proceed to sprinkle the black beans, colored peppers, sausage, and jalapeños.
  • Place a second layer of chips on top of the first. Cover with cheese, black beans, colored peppers, sausage, and jalapeños.
  • Bake in the oven for about 10 minutes, or until the cheese is melted! Serve with the pico de gallo and chopped avocado. (I am a huge guacamole fan, but I was feeling a little too lazy to actually make guac.)
